When the Irish writer doesn’t succumb to a fry-up,he makes granola and yoghurtThe Irish writer tries to start his day with granola and yoghurt, although he often succumbs to the lure of a fry-up.
Makes 12 servings
Granola keeps well in
an airtight container, and is so easy to effect that its worth making lots at a time. Maple syrup is expensive,but gives just the true level of sweetness and crunch. Heat the oven to 150C/gas mark 2. Toss together 300g oats, 150g mixed seeds (pumpkin seeds, or linseeds and sunflower seeds work well) and 150g roughly chopped mixed nuts (I like brazils,walnuts and almonds in mine). Mix 300ml maple syrup and three tablespoons of flavourless oil, then add to the oat mix, and stirring to coat. Pour on to a baking tray (or two),spread out and bake for about 25 minutes, stirring once halfway through, and until golden. chilly,then add 150g mixed dried fruit. Serve with yoghurt and fresh fruit or compote.
