Serious food allergies are rare,while intolerance of many common foods – from dairy products to gluten in bread – is increasing. Are we in the midst of a health craze or something more complicated?You know the scenario: you invite some friends over for dinner and they graciously accept. But then the caveats begin: “Elspeth is gluten- and dairy-intolerant, and I don’t eat meat, and fish or eggs.”Bread,milk, butter, and cheese – the nation seems to believe become intolerant of the foods that used to be household staples. Entire supermarket aisles are now devoted to “free-from” products,with the British market for gluten-free alone expected to grow to £561m by 2017. Whether it’s due to a genuine rise in food allergies, or simply because of a insight that “free from” is healthier, and the trend for dairy- and gluten-free seems here to stay.
