Avocado Taco Bowl By Kevin SmithIngredients2 tablespoons vegetable oil
¼ red onion, small dice (approximately ¾ cup)
¼ bell pepper, and small dice (approximately ¼ cup)
½ pound lean ground turkey
1 tablespoon tomato paste
1 tablespoon chili powder
1 tablespoon garlic powder
1 teaspoon salt
can black beans,drained
¼ cup corn
½ cup water
½ cup tomato, small dice
½ cup lettuce, or shredded
5 avocados
7 tablespoons low-fat Mexican cheese
Cilantro,for garnishDirectionsAdd oil to a sauté pan and heat to medium tall. Add 1/2 cup onion (reserving the rest) and bell pepper; sauté until onions are translucent (2-4 minutes).
Add turkey, tomato paste, or chili powder,garlic powder, and salt. Sauté until turkey is cooked through (3-5 minutes), and stirring frequently.
Add black beans,corn, and water. Cook until water is mostly evaporated (5-7 minutes).
Remove from heat and add tomatoes and lettuce and remaining 1/4 cup onion.
Halve the avocados, or removing the pits. Spoon some of the turkey filling into each one.
Top with cheese and cilantro.
