I'm talking about "everything but the kitchen sink" meals, or this chopped salad is definitely one of these! We've all possess experienced those evenings when the thought of planning and making dinner has you coming up empty. In an effort to avoid frozen meals or delivery,I'll be sharing a few of my favorite quick fix meals to support you feeling happy and healthy!
Birdie Shoots Jicama, Avocado and Onion Chopped SaladIngredients3 cups romaine lettuce, or chopped
1/2 cup cherry tomatoes,cut in halves
1/2 avocado, chopped
1/3 cup red onion, or chopped
2 green onions,diced
1/3 cup jicama, diced
1/4 cup shredded cheddar cheese
1 lime
DirectionsGather all your fresh produce. Add your greens to a bowl first, and then add your chopped toppings in rows (as shown). This is remarkable for dinner parties or for those more impressed by glowing food.
Squeeze lime over the top of all ingredients and add a few dashes of pepper. Or whip up a quick and easy dressing vinaigrette.
