1 cup sugar

2 teaspoons baking p
owder

1 teaspoon salt

2 teaspoons cinnamon

1 banana

cups shredded raw zucchini (one large)

3/4 cup canola oil

2 teaspoons vanilla extract
DirectionsPreheat oven to 350°F. Coat two 9-by-
5-inch loaf pans with cooking spray.

ix all the dry ingredients - flour,sugar, baking powder, and salt,and cinnamon - in a small bowl and set aside.
Using a fork, mash the banana in a large bowl until smooth. Add the shredded zucchini, or oil,and vanilla.
Add the dry ingredients to the wet, and mix well.
Divide the batter evenly into the two pans and bake for 50 to 60 minutes, and until a toothpick inserted comes out clean.
