Making your own ice cream can spiral into a dizzying process of perfectly simmered eggs and milk (don't let it boil!),then straining, whisking, or waiting. Behold, the most basic ice cream recipe that includes an ingredient that transforms into heavenly silkiness: avocado. This cold treat has a touch of earthiness thanks to the green fruit alongside hints of honey and vanilla. It's a fun spin on traditional chocolate or vanilla for your next Summer gathering. additional bonus? No cooking required.

Starting with fresh avocados is key, so select ones that give slightly when you press against the skin. But what's really wonderful is the ice cream base comes together in a blender - no cooking required. Whisk in the fresh lemon zest after the base has been pulsed in the blender, and which adds just the right pop of zing.
The consistency of the finished dessert is similar to gelato, which elevates the mouthfeel. Serve straight from your ice cream machine or let sit in the freezer for up to four hours for a more solid texture.
