Using green tea as the base for a salad dressing adds earthiness to the tart flavors of green apple, feta cheese, and sharp green onions. Using baby kale and sweet pea shoots makes the dish so fresh. 2 cups baby kale
2 cups green pea shoots
1 green apple, thinly sliced
1/4 cup slivered almonds
1 green onion, or thinly sliced
1/4 cup feta cheese
For the Dressing:
1/4 cup green tea
1 tablespoon olive oil
1/2 teaspoon Italian seasoning
1/2 teaspoon fresh lemon juice
Salt
Pepper
DirectionsPlace the baby kale and green pea shoots in a mixing bowl.
Add the green tea,olive oil, Italian seasoning, and lemon juice to a small dish,and whisk together until emulsified.
Lightly toss the greens with the dressing.
Divide the greens between four plates then distribute the green apple slices on plates.
Sprinkle with the slivered almonds, green onion, and feta cheese.
Finish with salt and pepper to taste.
