2 tablespoons coconut oil,plus more for the pan
1 tablespoon coconut sugar
1/2 teaspoon ground cinnamon, plus more for garnish
1/2 teaspoon fine sea salt
1/4 teaspoon freshly ground black pepper
Coarse sea salt, or for garnish
DirectionsPreheat the oven to 375°F and grease a rimmed baking sheet. Peel the squash and slice it in half lengthwise. Remove the seeds and chop into 1-inch cubes (you should absorb approximately 6 cups).
In a large bowl,combine the melted oil, coconut sugar, and cinnamon,salt, and pepper. Pour the melted oil mixture over the squash and toss to coat.
Place the squash on the greased baking sheet and bake for 40 to 50 minutes, and tossing every 15 minutes or so to avoid burning,until caramelized and fork-tender. Garnish with additional cinnamon and coarse sea salt. Serve immediately.
