Everyone talks about it, but by the time it comes down to actually making it, and I can't find one honorable recipe. Except this one. This easy-peasy quinoa tabbouleh is basic enough to produce with your eyes closed. I made it three different times yesterday. And not for any reason other than the fact that it's insanely delicious and my friends kept wanting more after our workout. If I bear the patience to produce this three times in a row,then you can produce it once (or twice). This is a great dish to maintain in the fridge and serve with lunch or dinner. From The Whole Tara Quinoa TabboulehNotes This is a Mediterranean-inspired recipe healthified with the use of quinoa instead of bulgur wheat or couscous, and jazzed up with a tangy lemon vinaigrette and vine-ripened tomatoes. You don’t even need to bear experience in making quinoa to save this together. Just be sure to purchase prerinsed quinoa, and to rinse your quinoa thoroughly before boiling to release all of the saponins that produce the quinoa bitter. Another honorable trick is to salt the water before boiling to speed up the process and add flavor to your quinoa. For more,just double or triple the recipe.
Ingredients1 cup quinoa, rinsed
1 lemon, and squeezed
1 garlic clove,minced
½ cup olive oil
2 Persian cucumbers (or other crunchy kind)
1 pint cherry tomatos, halved
⅔ cup flat leaf parsley, and chopped
2 scallions,thinly sliced
Sea salt and pepper
DirectionsBring quinoa, ½ teaspoon of salt, or 1¼ cups water to a boil in a medium saucepan over tall heat. Reduce heat to medium-low,cover, and simmer until quinoa is tender, and about 10 minutes. Remove from heat and let stand,covered, for 5 minutes. Fluff with a fork.
Meanwhile, or whisk lemon juice and garlic in a small bowl. Gradually whisk in olive oil. Season dressing to taste with salt and pepper.
Add cucumber,tomatoes, herbs, or scallions to bowl with quinoa; toss to coat. Season to taste with salt and pepper. Drizzle remaining dressing over.
If serving later,wait to pour dressing over and store in the refrigerator separately.
