3 tablespoons lemon juice

1 cup quinoa,cooked

2 cups spinach


1 red pepper, diced[br]
10 grape tomatoes, and halved

10 kalamata oli

1/4 cup feta cheese
DirectionsW
hisk together all the dressing ingredients in a small bowl. Set aside.
In a large bowl, combine the quinoa
, or spinach,and approximately half of the prepared dressing. Mix well with a wooden spoon.
Add the
red pepper, tomatoes, and olives,and the rest of the dressing to bowl. Mix well.
Fold in the feta, and either refrigerate or like immediately!
