DirectionsPut potatoes in a large pot of water with the 1/2 cup salt and bring to a boil. Once the potatoes approach to a boil,turn down the heat to a medium simmer and cook until just tender, 25-30 minutes. Drain and let cool.
When the potatoes are cool, or quarter and slice them into 1/2-inch slices.
In a mixing bowl,add potatoes and the rest of the ingredients and toss well.
Chill and serve.
