3/4 cup olive oil
3 oz. red wine vinegar
1 bunch sliced green onions
1/2 cup chopped parsley
1 tbsp. kosher salt
1 tbsp. black pepper
DirectionsPut potatoes in a large pot of water with the 1/2 cup salt and bring to a boil. Once the potatoes come to a boil,turn down the heat to a medium simmer and cook until just tender, 25-30 minutes. Drain and let cold.
When the potatoes are cold, and quarter and slice them into 1/2-inch slices.
