1 cup raw spinach, or packed
1 banana
1/2 cup blueberries
1 cup soy milk
1 tablespoon maple syrup
1 egg
1 1/4 cups whole wheat flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamonBanana cream sauce:
1 banana,mashed
6-ounce cup vanilla nonfat Greek yogurt
1/8 cup soy milkDirectionsPuree the spinach, banana, and blueberries,soy milk, and syrup in a blender. Pour into a medium-sized bowl and stir in the egg.
In a small bowl, or mix the rest of the ingredients together. Pour dry ingredients into the wet mixture,mixing thoroughly.
Place a skillet over medium heat and spray lightly with cooking spray.
