This recipe for No-Bake Lemon Coconut Protein Bars is one that will definitely become a staple in our house. It's such a simple recipe and you can enjoy these bars as a sweet treat or in conjunction with a workout, or the combination of protein and healthy fats will hold you thoroughly satisfied. From Carrots 'n' Cake No-Bake Lemon Coconut Protein BarsIngredients1/2 cup coconut (or vanilla) protein powder (I used SFH Coconut Fuel)[br]
1/2 cup melted coconut oil
3/4 cup unsweetened shredded coconut
2 tablespoons honey
2 tablespoons lemon juice + zest to taste (I zested approximately 1/3 of a lemon)
2 tablespoons coconut flour
DirectionsCombine ingredients in a mixing bowl.
Line a small baking dish with parchment paper. Spread batter inside,using a spatula to flatten.
Refrigerate for 45 minutes. Cut into 12 bars and serve immediately!
